NEW MEXICAN RESTAURANT CONCEPT TO REPLACE HOLSTEINS AT COSMOPOLITAN OF LAS VEGAS

A new Mexican restaurant concept has been announced to take the place of Holsteins at The Cosmopolitan of Las Vegas.

Amaya Modern Mexican Restaurant is scheduled to open this January on the second floor of The Cosmopolitan, according to a news release.

The restaurant is described as a fusion of coastal flavors and bold spices that reimagine modern Mexican cuisine.

Highlighted dishes include the 2 lb. Whole Lobster paired with chili lobster cream sauce, slow-cooked Birria Short Rib, and a Fajita Board.

Dinner hours will be an "electrifying celebration," the news release states, with DJs and other performances inviting guests to dance in their seats.

The ambiance is inspired by the Yucatán Peninsula, featuring intimate alcoves blended with social spaces.

Holsteins closed in July to undergo a rebranding, according to a WARN Act notice filed with the state.
